Q. What is the main compound of Save-ory ?
A. The key compound of Save-ory is Є*-polylysine which
is a homopolymer of
L-lysine, an essential amino acid.

Q. What makes Save-ory a natural preservative?
A. It is well known that Є-polylysine and Є-polylysine-producing
bacteria are widely distributed in nature. Because there is
absolutely no chemical synthesis during production, we can
say that Є-polylysine is natural.
Q. How is Є-polylysine produced?
A. It has been produced by a fermentation technology in Japan.
The manufacturing process entails producing Є-polylysine by
using natural bacteria without gene manipulation. It is produced
by microbial fermentation like miso (soybean paste), soy (soy
sauce) and yogurt. It means that Є-polylysine is produced
by same process as it is done in nature. Moreover, all manufacturing
processes do not contain any chemical synthesis process.

A. The safety data have been published on many journals including
"Regulatory Toxicology and Pharmacology".
