A. The key compound of Save-ory is Є*-polylysine which is a homopolymer of
L-lysine, an essential amino acid.

Q. What makes Save-ory ™ a natural preservative?
A. It is well known that Є-polylysine and Є-polylysine-producing bacteria are widely distributed in nature. Because there is absolutely no chemical synthesis during production, we can say that Є-polylysine is natural.

Q. How is Є-polylysine produced?
A. It has been produced by a fermentation technology in Japan. The manufacturing process entails producing Є-polylysine by using natural bacteria without gene manipulation. It is produced by microbial fermentation like miso (soybean paste), soy (soy sauce) and yogurt. It means that Є-polylysine is produced by same process as it is done in nature. Moreover, all manufacturing processes do not contain any chemical synthesis process.
